Pinterest take 2: Carrot Coconut Muffins

     After last weeks fiasco you would think I would steer clear and just ignore pinterest.
Head to the library and grab an armful of DIY craft books and some dusty old recipe books off the shelves.  

No one has had such an epic fail from something found in a book right?
Pinterest may have won the first round but I am still in this.
I found this yummy looking recipe for Carrot Coconut muffins  and of course I promptly pinned it thinking when the kids went back to school I would whip up a batch.

Well, today is the first day of school and I have nothing but time until the buses arrive down the street so, I am going to whip up a batch this morning.
The pinner claims they are “amazing and delicious.”
I guess we shall see about that. 
Am I a little nervous that this could be another pinterest fail?
A little bit… but like I said before.
Pinterest hasn’t seen the last of me!
Here is her amazing recipe:

  • 1-1/4 cup All Purpose flour (Ultragrain)
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp pumpkin pie spice
  • 1 tsp cinnamon
  • 3 tbsp coconut oil, melted
  • 1/4 cup light brown sugar
  • 1/4 cup turbinado  {it’s a raw sugar}
  • 2 large eggs
  • 1/2 cup unsweetened applesauce
  • 1/2 tsp vanilla extract
  • 1-3/4 cup shredded carrots (about 2 medium ones)
  • 1/3 cup raisins
  • 1/4 cup chopped pecans (or walnuts) {we are opting out so I can send these to school}
  • 1/3 cup unsweetened shredded/flaked coconut
  • Preheat oven to 350 degrees F. Line a muffin tin with 12 muffin liners.
  • Sift together the first 6 ingredients.
  • In a large bowl, whisk the oil, brown sugar, and eggs until well combined. Whisk in the applesauce, vanilla, and carrots.
  • Add the dry ingredients and mix until combined.
  • Stir in raisins, pecans and coconut.
  • Divide the batter between the muffin cups. Bake until a toothpick comes out clean, about 20-25 minutes. 
  • Transfer to wire rack to cool completely.
